For many years, Knysna was famous as an oyster production center in South Africa. The large bay and lagoon with mixed salt and fresh water is an ideal environment for industrial oyster farming. This is where the oyster festival takes place once a year, in the last days of June and at the beginning of July, for connoisseurs of these crustacean dishes from all over the country.
